I have found that if I don’t have some sort of plan for lunch during the week, then I find myself standing in front of the fridge way past noon, insanely hungry and grabbing the quickest thing I can find.

We’ve been putting together some easy recipes that can be meal prepped in advance to help solve our lunch dilemma.



This Easy Sweet Potato recipe is our newest weekday lunch obsession. We made a batch on Monday and enjoy all week long.

As their rich orange color suggests, sweet potatoes are a great source of Beta-Carotene, which our body converts into Vitamin A. We need Vitamin A to maintain healthy skin, vision and organ function.

When you eat both the inside and skin of sweet potatoes, you are getting more potassium than two medium bananas. Potassium can help regular blood pressure by helping regulate sodium and excess fluid in our body.

Easy Sweet Potato Recipe

An easy sweet potato recipe that is perfect for meal prepping to use for fast weekday lunches or meatless dinner side dishes.

  • 2 pound sweet potatoes
  • 3 tbsp extra virgin olive oil
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 1 tbsp dried basil
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • Preheat oven to 375 degrees F

  • Wash sweet potatoes and cut into one inch cubes. Note – the more uniform the pieces the more evenly they will cook

  • Add cut sweet potato to large bowl, drizzle with olive oil and add garlic, onion, basil, salt and pepper. Mix well to combine

  • Spread sweet potatoes into large baking dish place in oven for 45 minutes, switch halfway through
